Mexican Green Rice (Arroz Verde)arroz verde

  • 1 cup of rice
  • half an onion
  • 1 cup of coriander
  • 1 chile serrano
  • 1 chile poblano
  • 1 clove of garlic
  • 100g manchego cheese
  • 3 cups of boiling water
  • 1 tbs of cooking oil

Directions

Take off the stem and all the seed of both chillies, serrano and poblano.

Blend the onion, coriander, serrano, poblano, and garlic in 2 cups of water until smooth.

Put the oil in a cooking pot, when hot, add the rice and fry for some seconds.

Drain the mix of chillies and add to the rice. Let it boil. When boiling, season with salt.

Lower the flame, cover with the lid making sure there's a little open to let the steam go and cook.

Do not mix the rice for this will turn it to a batter.

Once cooked, cover with the grated manchego cheese and cover for some seconds.
