Enjoy this stew-like maize meal, can be prepared with different flavours and style, like the Colima style white pozole, Jalisco style red pozole or Guerrero style green pozole. You can even be creative and use different chillies to do it, like the poblano peppers. A favourite dish in Mexico's Independence celebrations in September and in the cold days of winter. Don't forget to have oregano, chopped onion, chopped lettuce or cabbage, lime, raddish and tostadas to enjoy it.
Keep in a cool dry place, away from sunlight. Once opened, place in an air tight container and keep refrigerated for up to one week.
